Ingredients:

200-300g Pulled Leg of Lamb

50ml gravy

2 Whole meal roll

1/2 Red onion
-
1/2 courgette
-
1/2 carrot
-
Red/ white cabbage

Garlic aioli/ mayo
-
Spicy ketchup (optional)

Method:
1 Slice the onion and on a low heat fry off in a little olive oil. Keep the heat low and cook until they are soft and becoming slightly crisp.

2 Add in the pulled lamb ensuring it is broken up as much as possible. Slowly heat adding the left over gravy/ juices you got from the slow cooker process. Allow to warm through until the mixture becomes moist and slightly runny.

3 Grate the carrot & courgette & chopping the cabbage into long strips. In a bowl mix together with about a tablespoon of garlic aioli or mayonnaise and leave to one side. You can also use tzatziki if preferred.*

4 Place the roll in the oven to warm through and become slightly toasted on the outside depending on your preference. It's also good having the roll untoasted.
5 Place a serving of the lamb on one of the rolls, adding a generous amount of the coleslaw on top of the meat. I like to eat my burger with some of my Sweet Potato Wedges.
*I like adding a some spice to my coleslaw by using some spicy ketchup or chilli sauce
