Ingredients:
- 400g Chicken breast/ thigh
- 1/2 Aubergine
- 1/2 Large Pepper
- 1 Onion
- 200ml tomato sauce
- Tomato paste
- Garlic
- Tzatziki
- 1/2 Tsp. of cumin, ground ginger, ground coriander
- 1/4 Tsp. chilli flakes/ powder & a sprinkle of black pepper

Method:
1 Cut chicken into inch cubes, heat a pan with oil over a high heat add the chicken & season with the spices until golden brown.

2 Chop garlic finely & the veg up into large cubes & add to the pan along with chopped garlic & cook with the chicken until slightly soft.
​
3 Stir in a tablespoon of tomato paste & cook down until evenly coated around. Stir in the tomato sauce & reduce the heat & cover. Cook for around 30 minutes until the mixture has thickened.

4 Serve on warm white/ brown rice, or with a large pita bread & garnish with Tzatziki
