Ingredients:

1-4 Pork Loin steaks (150-200g each)

Panic bread crumbs

Cabbage
-
1 egg
-
Whole meal flour
-
Coriander
-
Smoked paprika
-
Golden curry sauce

Cooked white rice

Method:
1 On a chopping board, bash out the pork steaks with a rolling pin until they are evenly thin all over around 1 cm thick.

2 In a container mix together the flour, salt & pepper & add a tsp. of smoked paprika. Press the pork steaks into the flour until evenly coated & shake off any excess flour.
3 Finely chop a handful of the coriander (if using fresh) & mix together in a container with the bread crumbs. There should be enough crumbs to cover the bottom of the container you are using.

4 Whisk the egg in a wide bowl & coat the pork, then remove & place straight into the bread crumbs. Cover with more crumbs & press down on both sides of the pork to evenly coat the steak. Remove & repeat the process depending on how many you are making.

5 Heat a cast iron pan on a high heat with a good amount of olive oil. Fry off the pork steaks for about 3/4 minutes on either side until both sides are golden brown & crispy. Remove & place onto some kitchen towel.

6 For the curry mix I just use Golden Curry mix from the shop, so use as directed. Slice the pork into half inch strips & serve on top of cooked white/ brown rice. Pour the sauce over the top & garnish with some thinly slices cabbage.
