Sometimes the simple things are the best things. At 14 I used to wash dishes at a local Italian restaurant, for my dinner one night the chef gave me pasta with just olive oil, broccoli, anchovies and olives. It was amazing and so simple and quick from such few ingredients and literally took him 2 minutes to make! I've created my own version here but this is perfect for times when you have limited ingredients in the cupboard but want a quick, tasty, healthy dinner.

Ingredients:

200g Spaghetti

Broccoli
-
10 Baby/Cherry tomatoes

Olive Oil
-
2 cloves Garlic (finely chopped)

1/2 tsp. Chilli Flakes
-
Anchovies (roughly chopped)
Optional
- Chorizo (sliced)

Parmesan
-
Parsley (roughly chopped) ​​
Method:
1 Bring a pan of salted water to a rolling boil and slice around 4/5 large broccoli florets into small pieces.
2 Cook the spaghetti for 10 minutes until cooked but still slightly firm (al dente). Add the broccoli for the last 4 minutes so they cook through, then drain.
3 Heat 2 tbsp. Olive oil on a low heat. Throw in the garlic and chilli flakes and chorizo (if using) and lightly fry for 1 minute. Add in the anchovies and the tomatoes and fry for a further minute.
4 Before adding the spaghetti turn up to a medium heat. Add the spaghetti and broccoli and toss so the pasta is fully coated in oil, and heat for a minute stirring all the time so nothing burns.
5 Serve immediately and grate over some parmesan to finish and chopped parsley.
