Breakfast Rice bowl

Ingredients:

  • 100g Cooked rice

  • 3 Eggs

  • Salami/ Chorizo

  • Tomato

  • Avocado

  • Rocket/ Spinach

Method:

1 Slice the salami or chorizo into thin pieces. Lightly fry off in a dry pan until the fat starts to render.

2 Add in the rice & heat over a medium heat tossing regularly until the rice is warm throughout.

3 Add in half a chopped tomato & season well. Once the mixture is adequately hot throughout move rice to one side & crack in a couple of eggs. Beat the eggs in the pan to start scrambling & slowly mix in with the rice.

4 Cook until the rice & egg are fully mixed together & the mixture is relatively dry. Throw in some spinach or rocket leaves & remove from heat.

5 Fry off an egg to your liking & serve on top with some sliced avocado. I also like my rice with some Kewpie (Japanese) mayonnaise.
