Avo' Protein Pancakes

These pancakes take care of your sweet tooth cravings & make getting up easy! Enriched with Egg AND whey protein they make an awesome "treat" for your breakfast.

Ingredients:

  • 1/2 Avocado

  • 1 scoop vanilla Protein Powder*

  • 1 protein scoop of oats

  • 2 Eggs

  • Baking powder

  • Full fat milk

  • Protein scoop of mix nuts

  • (Optional) Maple Syrup/ Honey

 

*Any flavour protein can be used but I prefer Vanilla

These pancakes take care of your sweet tooth cravings & make getting up easy! Enriched with Egg AND whey protein they make an awesome "treat" for your breakfast.

Method:

1 In a bowl smash up the avocado until smooth, crack in both eggs & mix together thoroughly.

2 Blend the oats until a fine powder* & add to avocado along with 1 scoop of protein powder, the nuts if using, a pinch of salt & half a teaspoon of baking powder.

3 Mix until a smooth consistency, add milk until relatively runny mixture. The aim is to create a thick, smooth batter that sticks to the back of a spoon but still flows well.

4 Heat a non-stick pan with a little olive oil until hot then reduce the heat to low. Using a ladle spoon in the batter gently to create 6inch circles. Leave on a low heat for 1-2 minutes, until the bottom is cooked, & It's easy to move around the pan.

5 Gently flip & cook for another minute. The aim is to keep the inside soft & moist. Repeat until the mixture has been used up. You should have 4-5 fluffy pancakes.

6 Serve with a drizzle lemon juice & honey or Maple syrup. Although they're pretty good on their own. Could also be served with some Greek or natural yoghurt.

 

 

*For a low carb alternative skip the oats & add less milk, or more protein powder. Alternatively you can add in more oats for a higher carb loaded breakfast, just add more milk too.
