Method:

Pre-heat the oven to 200'C. Finely chop the garlic, chilli, onion & courgette as small as you can. Mix together in a bowl with the mince, egg, smoked paprika & seasoning until evenly mixed.

Add in the panko bread crumbs (normal bread crumbs are fine) until the mixture doesn't stick to your hands & you can could with it easily.

Portion out around 6-8 burgers from the mix. The easiest way is to create compact balls first, then flatten with a spatula pushing in around the sides to keep a compact burger.

Heat olive oil in a griddle pan to a high heat. Sear each side of the burgers to create charred lines on either side. Transfer to a baking tray (or leave in griddle pan) & move into the oven for 10 minutes.

I like to add some salami & cheese to my burgers & cook for a further 5 minutes. If not using just cook for 15 in total.

Put the rolls in the oven for around 2/3 minutes until soft & warm. Serve the burgers in the rolls with some rocket leaves & your condiments of choice. These go really well with my sweet potato wedges.
